AMERICAN SINGLE MALT WHISKEY
Every adventure has a beginning, and ours was Single Malt Whiskey. With bourbon dominating the American craft spirit market, we were inspired us to test new waters with Deerhammer’s cornerstone spirit.
Beginning its life as porter-style 100% malted barley whiskey, our Single Malt is shaped by open-air fermentation and double distillation through direct-fire copper pot stills. Then, stored in charred virgin white oak casks, it slumbers at the base of Colorado’s tallest mountains in the beautiful adventure town of Buena Vista. This high alpine climate maximizes the flavor potential of our mash, due to dramatic temperature shifts that can range from 40-80° in a single day. The result is a distinctly American taste of place: aged no less than two years and bottled at 92 proof with notes of sweet coffee, cacao, caramel and spices. POT STILL RYE
Deerhammer set out to distill a uniquely Colorado rye whiskey in the Fall of 2016. We have thieved samples over the years, with batches varying in maturation from 2-4 years. Ultimately we landed on a selection of some of the most extraordinary barrels for our Pot Still Rye debut bottling. Ongoing, we will marry together our absolute favorite barrels into a singular annual small batch release.
This 2020 Deerhammer Pot Still Rye features a grain-bill comprised of 70% Colorado rye (San Luis Valley), 20% oats, 10% roasted barley. It is 4 day open fermented and double pot distilled on our custom built ‘squat-head’ copper pot stills. Maturation occurs at 8,000ft in heavy toast, #2 char new oak barrels. TASTING NOTES Aroma: oatmeal raisin cookies, vanilla, cardamom, blueberry cobbler. Flavor: caramel, dry coffee, cinnamon toast, caraway, pipe tobacco. Finish: grilled bran muffin, cashews, alfalfa, cracked peppercorn. Pro tip: Keep your eyes peeled for the occasional cask strength store pick single barrel expression of this rye in late 2020! |
STRAIGHT BOURBON : COLORADO 4-GRAIN
When it comes to grain-based spirits, bourbon is the barrel-aged essence of America. For Deerhammer Straight Bourbon, we achieved a specific taste of place, by utilizing grains grown in both the San Luis Valley and the four corners region of Colorado.
Deerhammer Straight Bourbon features a 4-grain recipe comprised of Colorado corn, San Luis red spring wheat, cold smoked oats, and roasted barley. This mindful blend harkens towards a classic bourbon, while firmly laying challenge to preconceptions of the style. Such a unique recipe is furthered with a traditional sour mash, four days of open-air fermentation, direct-fire pot still distillation and finally aged for a minimum of 2.5 years in toasted #2 char virgin oak. The end result is a decisively Colorado bourbon with qualities that echo the signature profile Deerhammer has become known for — deep complexity of flavor and a tremendously enduring finish. |
HICKORY SMOKED CORN WHISKEY
Created to showcase some serious western fortitude, Rough & Tumble will inspire you to sip (or shoot) under the wild, WILD western skies. Built as a classic American whiskey and born from new frontiers, Rough & Tumble begs to be enjoyed while burning daylight, hootin & hollering, and reveling in all things free and majestic.
Forged from 100% Colorado corn grown in the Four Corners region, we’ve yet again laid challenge to another old standard American whiskey. Rough & Tumble rolls with an in-your-face hickory wallop that comes from a day-long cold smoking process. From there, we follow a traditional sour mash, 4 day open fermentation, and direct-fire double pot still distillation. This process proudly offers up a bustling, non-highfalutin, spin on a time-honored American whiskey. Bring this whiskey on all of your backslapping adventures. DUTCH STYLE GIN
Deerhammer Gin is first and foremost, a labor of love. Our dedicated, grain-to-glass approach begins with the same spirit base as our flagship Single Malt Whiskey: 100% malted barley. As for “Dutch Style,” it’s the use of barley that classifies this spirit as an old school genever, providing a gentler pine flavor than mainstream, juniper-heavy gins.
After mashing, fermenting and distilling, the infusion of 15 unique botanicals shapes the spirit: Juniper Berries, Coriander, Orris Root, Chicory, Coconut, Grapefruit, Star Anise, Grains of Paradise, Hibiscus, Cardamom, Mint, Cloves, Cacao Nibs, Cassia, Lime. The result is a nuanced, complex profile explicitly crafted to defy the rough menthol notes too often associated with this spirit. We particularly like enjoying it in a campfire cocktail, breathing in the crisp, clean air of the Colorado pines. |
