STRAIGHT FOUR GRAIN BOURBONWHAT IS A COLORADO BOURBON?
When it comes to grain-based spirits, Kentucky bourbon is the barrel-aged essence of America. For Deerhammer’s four grain straight bourbon, we achieved a specific provenance, by utilizing Colorado grown grains blended with our own angles of innovation. This creation is unapologetically destinct (and delicious!) from it’s KY counterparts. PRODUCTION DETAILS Deerhammer’s straight 4-grain bourbon features a grain-bill comprised of 65% Ute Mountain Corn, 15% red wheat, 15% oats, 5% roasted barley. It is sour mashed, 4-5 day open-air fermented and double pot distilled on our custom built ‘squat-head’ copper pot stills. BARRELS & MATURATION Deerhammer utilizes custom 53 gallon cooperage. All staves are air cured for 18 months, heated with an interior heavy toast before reviving a light #2 char. This profile allows our complex grain bill to shine through, while lending subtleties of chocolate and baking spices. Our bourbon is barreled at an unusually low 105 entry proof. Such a low proof allows for more unique flavor development that is simply not achievable at the more cost efficient industry standard of 125 proof. These barrels are left to slumber at 8,000ft in Central Colorado for an average of 4 years time. TASTING NOTES Aroma: molasses, ripe plum, coffee, pecan pie, honey, barbecue. Flavor: roasted corn, dark chocolate, cinnamon, orange peel, tobacco. Finish: hickory, grilled peaches, oatmeal, savory, full body. |
