Deerhammer Hickory Smoked Corn Whiskey was created to showcase some serious western fortitude. Built as a classic American whiskey, with a flavor profile that weaves together the sweetness of Colorado grown heirloom corn with a distinct hickory smoke backbone, this whiskey begs to be enjoyed while burning daylight, hooting & hollering, and reveling in all things free and majestic.
COLORADO TO THE CORE
This 84 proof 100% corn whiskey is derived from an heirloom yellow corn varietal. It is grown with care and pride for Deerhammer by the Ute Mountain Tribe at an elevation of 6,000’. This corn has been cultivated to thrive in Colorado’s unique and unforgiving Southwest climate, and it brings forth a true taste of place.
After a 275 mile delivery from the farm to our distillery in Central Colorado, our silo is filled and the grain-to-glass process begins. Every single aspect of this whiskey is meticulously carried out at our distillery:
IN-HOUSE HICKORY SMOKED: Raw corn is shoveled into a custom-built, while hickory wood smolders a sweet smoke over the corn for a span of 6-8 hours.
TRADITIONAL SOUR MASH: After milling, we impart a traditional sour mash technique which carries forth our unique ‘house flavors’ and a vigorous start to our 4 day open fermentation.
DOUBLE POT DISTILLED: A true old-world process, we leverage traditional squat-head copper pot stills to carry forward absolute massive flavor from such a unique style of corn, as well as the cold smoke process.
MOUNTAIN MATURED TO PERFECTION: Corn whiskey by US law must be aged in *used* oak barrels vs. other American whiskey counterparts that begin in new charred oak. We mature this whiskey in our used bourbon barrels at 8,000ft for no less than 2 years.
Aroma: Sweet hickory, popcorn, toasted marshmallow, lemon peel.
Flavor: Grilled corn on the cob, caramel, dark roast coffee, cinnamon.
Finish: Sweet, briny, tobacco, chipotle pepper, browned butter.
