category of American single malt, the time seemed about right to wade into new waters. In the Fall of 2016, Deerhammer embarked on a mission to craft a rye whiskey that would embody the essence of Colorado, and we set our sites on unique grain varietals that thrive in our home state. Over the years, we distilled, matured, sampled and meticulously assessed these rye whiskey barrels. Only the most exceptional barrels are selected for each batch. This ongoing endeavor will always capture the pinnacle of our craft and the essence of Deerhammer's uniquely Colorado ‘Pot Still Rye Whiskey’. RECIPE SPECIFICS Grain Bill: 78% elbon rye, 12% oats, 5% c120 malt, 5% chocolate malt Mash: Sour mashed with a 4% backset addition at a ph of 5.5 Fermentation Profile: 4-day open fermented with M1 yeast Fermentation Temperature: 70f starting temp — Natural rise to 90f Distillation: Double pot distilled on custom ‘squat-head’ copper pot stills Barrel Entry Proof: 105 Average Exit Proof: 110 Bottling Proof: 88 Barrel Profile: Heavy toast, #2 char new oak barrels Maturation: Aged at 8,000ft in a semi-climate controlled warehouse Harvest Profile: Barrels are selected with age ranges between 3-7 years with the dominate contribution coming from 4 year whiskey TASTING NOTES Aroma: oatmeal raisin cookies, vanilla, cardamom, blueberry cobbler. Flavor: caramel, dry coffee, cinnamon toast, caraway, pipe tobacco. Finish: grilled bran muffin, cashews, alfalfa, cracked peppercorn. |
