PROGENY SERIES No.4 ~ Vino Verso

Our Progeny Series began as a celebration of Colorado and its innovative spirit. The 4TH edition within this series takes form as a collaboration with the highly acclaimed, Carboy Winery.

COLLABORATION
Since 2016, Carboy Winery has been active in transforming a state renowned for its beer and whiskey into a realm of exciting and adventurous wines. For Progeny Series No.4, we set out to acquire a range of freshly harvested Carboy barrels to lend a secondary finishing note to our American single malt whiskey. After an initial 3 year maturation in toasted/charred new oak, we then channeled our single malt into a secondary journey of an additional 2 years as it commingled within three distinct Carboy cask types: 

1   Albariño        2  Gewurztraminer Brandy        3  Bourbon Barrel Cider

PRODUCTION DETAILS
Mash Bill: 85% Pale Malt Barley, 5% Chocolate Malt, 5% c40, 5% c120
Fermentation: 4 day open-air sour mash ferment with M1 yeast
Proof Specs: Barrel Entry Proof: 105, Exit Proof: 116.54, Bottle Proof: 106
Blend Composition: 65% Albariño, 25% Brandy, 10% Cider
Maturation: 5yrs matured at 7,930’ in semi-climate controlled rackhouse

TASTING NOTES
Aroma: cherry pie filling, cinnamon raisin bread, hibiscus tea, leather
Flavor: blackberry jam, grilled peaches, fresh baked sourdough, lavender
Finish: toasted oak, dried apple slices, grape skins, honeysuckle
